Ingredients

Live lobster

Onion chopped 3tbsp

Garlic chopped 1tsp

Olive oil (evoo) 1/4cup

White wine 1cup

Tomato paste 2tbsp diluted in 1/2cup hot water

Rosemary 1tsp

Thyme 1tsp

Dried spearmint 1tsp

Salt and pepper

Boiling water 1litre (4cups)

Spaghetti 250gr (8oz)

Fresh parsley

Fresh basil

Method

Half the lobster lengths wise and clean the stomach and sand but keep the eggs if it has some, under cold running water

In a big frying pan sauté onion and garlic with olive oil

When onion and garlic is soften place lobster with cut side facing down in the pan. Cook for 3 minutes

Add the wine and boil for a minute, season with salt and pepper

Add the boiling water, rosemary, thyme and spearmint

Dilute the tomato paste in ½ cup of hot water and add to the pan

Boil together another 1 minute and remove the lobster

Add the spaghetti and boil to al dente (according to pasta manufacturing instructions)

Taste for seasoning and bring lobster back to the pan on top of spaghetti for only another half a minute

Serve pasta on a platter, place lobster on top of spaghetti

Sprinkle with fresh parsley and garnish with fresh basil
