Traditional egg recipe from Lakonia, Greece. Almost like scrambled eggs, cooked with tomato, hard white local cheese and siglino; another traditional local cold meat made from brined, smoked pork and flavored with oranges. This dish was cooked for Savor Greece S1E12 from the Pellana ladies.

Ingredients

Tomatoes fresh 3

Olive oil

Sfela cheese (local hard salty cheese) replace with pecorino

Siglino (local pork brined meat) replace with smoked ham or pancetta or smoked pork sausages

Eggs 6

Salt and pepper

Oregano

Method

Peel and grate the tomatoes. Place them in a frying pan with little olive oil and cook until the water is evaporated and tomato is cooked to a thick sauce.

Cut the cheese to pieces of your choice and fry them golden in olive oil. Keep on kitchen paper to absorb excess oil.

Prepare your cold meat you have chosen if you don’t have siglino and cut it to bite pieces

Add the siglino or cold meat pieces to the pan

Add the fried pieces of cheese in the cooked tomato.

Whisk the eggs with a pinch of salt and pepper and pour over the tomato, cheese and siglino.

Cook until eggs are cooked, sprinkle with oregano and serve
