There are many things that can take you back to your past especially when it comes to flavors that gives you comfort. One of them is Fanouropita!!! Both my grandmothers used to make this beautiful easy cake, so Saint Fanourios could reveal (Fanerosee) good things to me, or help me find something I was looking for. Since I am always looking for something, here is the recipe and may Saint Fanourios help me find what I am looking for!!! BTW… Fanouropita is vegan.

INGREDIENTS
4 cups flour
4 teaspoons baking powder
1 1⁄2 teaspoons ground cinnamon
1⁄2 teaspoon ground cloves
1⁄2 teaspoon salt
1 cup olive oil
1 cup sugar
2 oranges, juice and zest of, plus enough extra juice to have 2 cups fresh orange juice, in total
1⁄2 cup brandy
1 cup golden raisin
1 cup walnuts, roughly chopped, toasted
Powder sugar for topping the cake

DIRECTIONS
Preheat oven to 170C. (350°F).
Oil a 12-inch, round cake pan or a 9x13x2-inch baking dish.
Mix the flour with the baking powder, salt and spices.
In a bowl whisk the oil, sugar, orange juice, brandy and the orange zest.
Add the flour, the raisins and the walnuts.
Mix well.
Pour batter into prepared pan.
Bake the cake for 45 min to an hour (insert toothpick, if it comes out clean, it’s ready)
Dust the cake awhile still hot with powder sugar
