Flour, salt, olive oil, Xinomyzithra or Galomyzithra (Cretan cottage cheese), honey

Use one handful of flour for every pie you want to make.

Open a hole in the middle of the flour and put in it a little salt and a little oil.

Add as much water as needed to you pliable dough. Cover the dough with a kitchen towel and let rest for half an hour.

Divide into small balls and roll them with a rolling pin into the size of a saucer.

Place a ball of cheese in the center of each dough patty (the ball of cheese must be the same size with the ball of dough you cut)

Pull the dough around until it covers the cheese and "close" by pinching the edges.

Turn the pie upside down and open it with a small rolling pin the size of a small saucer.

Cook the pies without oil in a nonstick skillet till they are crispy and golden.

Sprinkle with honey and serve.
