2.2lb. (1klg) zucchini
1 cup crumbled feta cheese
10 spearmint leaves
2oz (70ml) olive oil
1 cup all-purpose flour
1 cup breadcrumbs
½ cup cinnamon
3tbsp melted butter
In a pot, grate the zucchini.
Finely chop the spearmint and add to the zucchini together with the breadcrumbs.
Add the egg and mix.
Mix in the flour till you have a pulp like a thick batter.
Wet a baking pan with olive oil in and dust it with flour.
Add the mixture of the zucchini in the pan and dust it again with flour.
Drizzle with the butter on top of the pie.
Bake it in preheated oven at 360F (180o) for 50 minutes.
