Greek Fava recipe

One of the most popular Greek dishes from Cyclades. Enjoy it with small fried fish and pickled beetroots

1lb of yellow Greek fava
2lb water
8oz chopped onions
3oz olive oil
3oz flavored olive oil (or just plain olive oil if you wish)
Salt and pepper


Wash the fava well with cold water. Place fava in a pot and add the water, the olive oil and pepper. Bring to boil and add the onion. Bring down the temperature and simmer. Do not skim; this froth is the protein of the fava and ads earthier flavor to your dish. Stir well in the beginning and continue stirring few more times during the cooking proses (according to the beans we get, we might need to add more water).

When the fava becomes like porridge we remove the pot from the stove, add the aromatic oil and salt. This is a rustic style fava, otherwise we mash well with a hand blender or pass it through a sieve for a more velvety texture.

Serve with chopped onion, olive oil, capers or sundried tomatoes
