1lb whole fresh smelt or fresh anchovies (only in season and same days catch)
2 onions cut into thin slices (julienne)
1 cup all-purpose flour
Olive oil for frying
Fresh parsley for garnish
Wash smelt dry well and season well.
Place it in a Ziploc bag add the chopped onion and flour
Shake the bag to flour the fish with onions.
Put some oil in an 8” frying pan and let it warm up. With your hand get half the quantity of the fish and onion mixture and spread it over the whole surface of the pan almost like a fritata.
Once the “frittata” has taken color [see it by lifting it a little] turn the contest of the pan in a plate, add some more oil in the pan and slide the pie back in the pan to brown it on the other side as well.
Garnish with chopped parsley and serve with salad.
