This recipe comes to us from Samos and Niki Merkouri
8oz chickpeas (soaked in water and ground in a blender)
Self-rising flour alone
3 onions chopped
2 tablespoons fresh dill
2 tablespoons fresh mint
Freshly grounded black pepper
Olive oil for frying
In a mixing bowl put the minced chickpeas, 1/2 cup of water, the chopped onions, dill, mint, season, and mix well. If necessary add some water and continue mixing until we have soft dough.
We continue with the flour. Add as much as needed to make nice firm dough. Leave it aside for about half an hour to rise a bit. Take spoonful, and fry in hot olive oil, about 3 minutes on every side so they can turn a golden color.
Serve in a platter with yogurt and lemon.
