Christos Mantidis revives the Serraiko table

This book constitutes the first official and complete record of Serres gastronomic culture.

It is the result of several years of survey in the villages and in the capital of the Serres province.

mantidis bookThe largest part of the book consists of traditional recipes from the local rural population and in seasonal order. Consideration is also given to religious feasts and fasting periods with special references to the Twelve Days of Christmas, the Carnival and Easter.

The recipes are collected from people’s confirmation, baring useful and historical information.

The next chapter covers the old Serreans and their different attitude towards cooking mainly due to the economic incapability to buy local produce.

The following chapter is a series of selected recipes from the refugees of Thrace, Asia Minor, Pontus and Arvanites. Finally there is a brief mention of Vlachos and Sarakatsaneous race living in various villages in the region.

I am confident that my book will be a beautiful beginning towards this culinary journey. I dedicate the book which records the life of many people, to the late and unforgettable Evi Voutsina.
